Classic Charlotte Dessert (CE)

Description

French-style Charlotte but originally English. It was created to honor Queen Charlotte, wife of King George III (1762-1830). Originally, it was more of a baked apple pudding. The French chef Antonin Carême modified the rustic tart into something more delicate and classic while still maintaining the biscuit crust and a mousse (Bavaroise) that would eliminate the need to bake the tart; he called the new version Charlotte Parisienne, which is how it is produced to this day. Various fruits or store-bought ladyfingers can be used. But in this class, learn to make the biscuit from scratch, as well as the real lemon Bavaroise mousse and the insertion of strawberries or raspberries, along with the assembly of this incredible, beautiful, and delicious tart!

Instructor

Chef Nanda Linford
Professional Pastry Chef, graduated from the Le Cordon Bleu Culinary Arts Institute, one of the most renowned in the world, and also graduated from the Culinary Institute of the Americas.
Nanda also graduated from Rosalind Miller Cake in London, where she enhanced her skills in structured cakes and sugar flowers.
Nanda Linford also studied and completed training with the master chocolatier at the Pastry Academy by Amaury Guichon, learning much more about chocolaterie and French desserts. She won the Brazilian pastry reality show, (Que Seja Doce), in 2022, taking home the trophy for best pastry chef of the program.
