Anne-Marie hails from a small town in Romania, where she learned cooking, baking, and crafting from a young age. Matt was raised in the restaurant business near New Orleans, Louisiana, and now serves as a Culinary Instructor at Bridgerland Technical College.

Chefs Anne-Marie and Matt Wilkerson are back in 2026 with some favorite dishes from the Cajun and Creole repertoire in New Orleans. Matt grew up in and around New Orleans, LA, attending culinary school there and beginning his journey in fine dining. He has 25+ years experience of cooking Cajun and Creole cuisine professionally. This class will be presented in a date night format, in which guests can expect to enjoy fully composed and garnished New Orleans dishes.

Anne-Marie and Matt will demonstrate each dish, with plenty of stories, anecdotes, and tips to successfully cook in your own kitchen. This is a demonstration-style class, and guests should come prepared to eat a full meal!

- Scones: Authentic Hand-made Scones, served warm with house-made "Clotted Cream" and delicious fruit preserves.

While you enjoy a leisurely, full-service tea at your table, the chefs will be at the front of the house sharing the "secrets of the trade." Forget everything you know about the humble sandwich. In this intensive hands-on lab, we are elevating the grilled cheese from a quick snack to a culinary masterpiece. From the science of the perfect "cheese pull" to the professional art of bread baking, you’ll learn how to construct sandwiches that range from nostalgic favorites to Parisian bistro classics.
Menu and Curriculum:
- Foundation (Bread Demo): Watch and learn as we demonstrate the secrets to three iconic loaves: pillowy Japanese Shokupan, a tangy, crusty Artisan Sourdough, and a rich, slightly sweet Braided Challah.
- Savory Lab: After a demonstration of some fine dining classic examples, the kitchen is yours. Construct your own signature grilled cheese using a curated "melt bar" of premium cheeses and gourmet fillings.
- The Perfect Pair: Enjoy your creations alongside a bowl of our signature House-made Tomato Bisque, prepared fresh by the chefs.
- The Sweet Finish: We’re taking the griddle to the dessert menu. We will demonstrate some high-end Dessert Grilled Cheeses, then let you experiment with your own sweet dessert "melts.
This is a hands-on lab, so come ready to cook! After a brief demonstration of bread-making and grilled cheese ideas, you will move to the stations to build, grill, and flip your own creations. Chefs Matt and Anne-Marie will be moving throughout the lab to provide one-on-one guidance on heat management, fat-to-bread ratios, and flavor balancing. You’ll leave with the skills to turn any loaf of bread into a fine-dining experience.

Individuals are responsible for canceling their registration should they not be able to attend. Refunds will not be issued for non-attendance.
